Soba Noodles
This is by far the BEST soup I have made so far from the South Beach Diet soup recipes, although I have enjoyed all the recipes so far. Here is the recipe: |

Napa Cabbage |
In a large saucepan, heat 2 teaspoons extra-virgin olive oil over medium heat. Add 3 thinly sliced scallions, 2 diced celery stalks, and 2 minced garlic cloves; cook, stirring occasionally, until softened, about 7 minutes. Stir in 1 pound diced, boneless, skinless chicken breasts; 2 cups Napa cabbage (it DOES matter if you use this type cabbage); and a pinch of salt. Add 5 cups lower-sodium chicken broth, bring to a simmer, and cook 5 minutes. Increase heat and bring broth to low boil, then add 4 ounces soba noodles, cook until noodles are tender .
